LeTourneau U. gets McCarthy

Bears basketball co-MVP for 2010 Jacob McCarthy committed last week to play at the next level for the LeTourneau University Yellow Jackets in 2011.
The 6-5 shooting guard set the Brownsboro High School record for 3-pointers in a season during his junior year when he hit 70 from downtown, then increased the record to 72 3-pointers made during his last season of high school play.
“It’s going to be fun, playing quality competition,” Jacob said after a ceremony held in the high school library to announce his school selection. “It’ll be harder for me, but a great challenge. It will be real competitive and I like that kind of basketball.”
Bavarian Wild Berry Fruit-Tea Pops
LeTourneau is a Division III school and a member of the American Southwest Conference. It competes in the conference’s eastern division along with Mississippi College, East Texas Baptist University, Lousiana College, College of the Ozarks, University of Texas- Tyler and the University of Texas-Dallas.
Jacob’s commitment to LeTourneau will put him on course to play against his BHS teammate and point guard Ryan Smith, who committed to UT-Dallas in mid-May.
“It’s going to be different,” Jacob said of seeing Ryan on an opposing team after playing on the same teams since they were youngsters. “It’ll be a fun experience. I’m just afraid I’m going to pass the ball to him.”
Jacob’s brother Patrick will be a sophomore at BHS next year and still in the Bears basketball program. But the boys’ dad Kevin said it won’t be a problem seeing each play ball.

“College is pretty much Wednesday and Saturday night games, while high school is Tuesdays and Fridays,” Kevin said. “So it doesn’t conflict as much as you think. It’ll be a great opportunity for us to be able to go watch both of them.”

Fruit-Tea Pops
Serves: 8 Preparation Time: 10 minutes Freeze Time: 4 hours
2 cups boiling water
4 Lipton Bavarian Wild Berry
Pyramid Tea Bags
1/2 cup sugar
1 cup chopped strawberries
Pour boiling water over tea bags; cover and brew 5 minutes. Remove tea bags and squeeze. Stir in sugar until dissolved; let cool slightly.
Combine tea with strawberries in medium bowl. Evenly pour into 8 (4-ounce) paper cups (or popsicle molds). Freeze until almost firm, about 1 hour. Insert wooden ice pop sticks into centers; freeze until firm. To serve, press firmly on bottom of paper cup to remove.

Serves: 2 Preparation Time: 5 to 10 minutes Chill Time: 1 hour

2 tablespoons sugar
1 cup frozen strawberries
1/2 cup strawberry frozen yogurt*
1/2 cup ice cubes (about 3 to 4)
Pour boiling water over tea bags; cover and brew 5 minutes. Remove tea bags and squeeze, then stir in sugar; chill.
In blender, process tea, strawberries and yogurt. Add ice cubes, one at a time, and process until blended. Garnish, if desired, with whipped cream and strawberries. Serve immediately.

4 cups boiling water
12 Lipton Tuscan Lemon Flavored
Black Pyramid Tea Bags 1/2 cup sugar
3 cups pineapple juice
1 cup orange juice
2 cups raspberries
Pour boiling water over tea bags; cover and brew 5 minutes. Remove tea bags and squeeze. Stir in sugar; chill.
In large pitcher, combine 2 cups chilled tea with remaining ingredients; chill.
Meanwhile, in 2 ice cube trays,* arrange 3 raspberries in each compartment. Pour remaining chilled tea over berries. Freeze 2 hours or until solid. To serve, pour punch into large pitcher or bowl. Add tea ice cubes. Serve immediately.
*If you don’t have ice cube trays, try using mini muffin pans or a 6-cup ring mold.

Black Pearl Hot ’n Spicy Chocolate Tea
Serves: 2 Preparation Time: 5 minutes Cook Time: 5 minutes
1 cup fat free or 1% milk 1 cup water 2 Lipton Black Pearl Black
Pyramid Tea Bags
1 tablespoon sugar, or to taste 1/8 teaspoon ground cinnamon 1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1 teaspoon chocolate syrup
Bring milk and water just to a boil in 2-quart saucepan. Remove from heat and add tea bags. Cover and brew 1-1/2 minutes. Remove tea bags and squeeze, stir in remaining ingredients. Serve immediately. Garnish, if desired, with whipped cream and a sprinkle
